If I decided to not have a dropdown list, will that decrease traffic to my website or impact on how easily people will find me?

Dropdown menus and anchor links do not have a direct impact on SEO. We always recommends following SEO best-practices to ensure that your site can be found on Google, but again, whether or not you use dropdown navigation menus or anchor links doesn't impact this.
